Bean Salad/Shundal/Usali on the go (Desi Style)

Bean Salad/Shundal/Usali on the go
Ingredients:
  • 1(14 oz or so) can of beans (garbanzo, kidney beans etc)
  • 1/2 tsp salt
  • 1/2 tsp of lemon juice (optional)
  • 1/4 cup of chopped cilantro
  • 2 green chillies
  • 1 tsp of mustard seeds
  • 2 tbs of corn oil or any oil of your choice
  • pinch of turmeric(optional)
  • pinch of hingh(optional)
Method:Drain the liquidy contents, rinse the beans and set aside in a bowl.
Heat oil in a pan and splatter mustard seeds. Add hingh, turmeric, chillies, cilantro, beans to the pan and mix well. Turn off the heat, add the salt, lemon juice and mix well. Bean salad is ready to be served.
Cooking tips: Can add 1/4 cup of fresh grated coconut. Can also use the frozen, unsweetened grated coconut. (Available at all Indian stores).
Serving tips: Serve hot or warm as a snack, a side dish for rice or rotis. Can also be served with a yogurt or buttermilk.

this looks quick and tasty...do you also add vegetables to it like cucumber etc?
