Bean Salad (Paradesi Style)

Bean Salad
Ingredients:
  • 1 (15oz or so) can of Beans (Chick Peas/Garbanzo beans, Kidney beans etc)
  • 1 small red onion chopped
  • 1 medium cucumber chopped
  • 1 tsp of vinegar(balsamic)
  • 3 tbs of olive oil
  • 1/4 tsp of oregano
  • 1/4 tsp of garlic finely minced (optional)
  • 1/2 tsp of salt
  • 1/2 tsp of ground black pepper
Method:
Drain and rinse the beans and set aside in a bowl. Toss all the ingredients together.
Cooking tips:
Can add black or green olives, roasted peppers. Can also add sliced, peeled, pitted green avocados (ripe avocados tend to become mushy).
Serving tips:
Chill before serving. Can be served as a side dish with any pasta, pizza or bread, inside pocket pitas and in wraps etc.
