Method

Preheat oven to 500 degrees.

Pizza with greens

Press and stretch each dough piece into 8" circle and place on greased or parchment lined pizza pan. Brush each pizza with garlic oil. Sprinkle the pizzas evenly with mozzarella/goat cheese/Colby cheeses. Drizzle each pizza with 1 tbs more of garlic oil. Bake for 10 to 15 minutes, until the crusts are crisp and the cheeses begin to turn brown.

Add the greens in a large bowl and toss with enough dressing to moisten. Place a handful of greens on each pizza and serve immediately.

Cooking Tips:

Slice pizza before adding the greens. Be sure your oven is clean otherwise the oven will start smoking.

Serving Tips:

Serve hot.

Make Your Own Pizza Dough

Ingredients:

  • 1 1/2 tsp dry yeast (2 pks )
  • 1 cup warm water
  • 1 tbs honey
  • 4 cups all purpose flour
  • 1 1/2 tsp salt
  • 4 tbs olive oil

Method:

In a small cup, mix honey, 3 tbs olive oil and yeast in warm water. Let it stand for a couple minutes, till it foams. Add 3 cups flour and salt into a large mixing bowl. Combine the contents of the bowl with the foamed yeast mixture and knead well. Add more flour as needed to make a soft dough. Knead dough for about 10 minutes until smooth,, sprinkling more flour as necessary to keep it from sticking to the bowl. The dough is ready when it is smooth and elastic. Then smear the kneaded dough with remaining olive oil, cover with a wet a paper towel and allow the dough to rise at room temperature for 30 minutes. Knead the dough again, divide into 6 balls, cover and let stand for 10 more minutes. Use immediately, or refrigerate for up to 4 hours. Press and stretch each ball into 8" circles, brush each with additional oil, top with your favorite topping and bake for 10 to 15 minutes in a preheated 500 degree oven until the crusts are crisp.

Cooking Tips:

Remove any chilled dough out of the refrigerator and bring to room temperature before using in your recipe. A warm mixing bowl goes a long way to help the yeast develop.

Serving Tips:

Use as base in your favorite pizza recipe.
