Snack: Spicy Tortillas Mytri Style

Spicy Tortillas

Ingredients:

  • 6 hard shell tortillas
  • 1 can Black beans, drained
  • 1 avocado, peeled and chopped
  • 1/4 cup chopped cilantro
  • 1 tbs lemon juice
  • 1 tomato, diced small
  • 6 corn chips, crushed, any style
  • 2 to 3 tbs of hot sauce
  • 1 small onion, diced small (optional)
  • 1/4 cup finely grated Colby or any cheese of your choice (optional)
  • 1/2 tsp salt to taste

Method:

Mash the drained black beans and add the hot sauce and mix well. Chop avocado, cilantro, tomato and add salt and lemon juice to taste. Take one hard shell tortilla and  spoon in 2 tbs of  the spicy black beans, then spoon in 2 tbs of the avocado mixture. Next, add 1 tbs of grated cheese or skip and go to the next step. Top all with a tablespoon of crushed corn chips. Continue and repeat the above steps with all the tortillas.

Cooking tips:

You  can add chopped jalapeno peppers, bell peppers to the avocado mixture.  Toasting the tortillas slightly in a toaster oven, gives another dimension to the taste. Quantities for the filling are just for reference and can be changed as needed.

Serving tip:

Serve anytime of the day as a snack or serve as a side dish with any Mexican entree.
