Roasted Vegetable Dosaes with Cheese
Ingredients:

Dosae:
  • 4 cups rice(no specialty rice needed)
  • 1 cup of urad dhal
  • 1 tsp salt
  • 1/2 cup of oil (olive oil, vegetable oil, corn oil , oil of your choice)
  • 1/4 cup of melted butter (optional)
Filling
  • 2 cups zucchini diced
  • 1 cup green bell pepper, cored, seeded and diced
  • 3/4 cup sweet onion coarsely chopped
  • 2 cups grape tomatoes
  • 2 tbs of olive oil
  • 1/2 tsp salt
  • 1/4 tsp died thyme
  • 1/4 tsp black pepper , coarsely ground
  • 5 oz soft spreadable cheese or roasted red pepper hummus
Method: Prepare doase dough the previous day. Lightly rinse the risce and the urad dhal in cool water. Add more water and let the contents soak in water for a couple of hours. Grind the soaked contents into a smooth dough and place it in a container. Grounded dough should not be too runny or too thick. Add salt, mix well and store in a warm place overnight.
Pre-heat oven to 350 degrees. To prepare filling, place zucchini, bell pepper, onion and tomatoes in a large baking pan. Drizzle with 2 tbs of olive oil. Add salt, thyme and pepper. Roast 30 minutes or until tender.
To make dosaes, pre-heat a thick tava (or a good non stick pan) on medium heat until hot. Take a ladle full of well mixed dough and pour it on on the heated tava. Using circular, concentric motions spread the dough as much as possible towards the edge of the tava. Drop a tsp of oil on the surface of the dosae and let it cook for a couple of minutes. Using a flat spatula slowly loosen the dosae from the tava and turn over. Cook on this side for a couple of minutes, carefully loosen and flip over again. Spread 2 tbs cheese on 1/2 of the dosae. Top with 1/2 cup roasted vegetables. Fold in half and transfer to a plate. Lightly brush the top with melted butter to give a rich flavor. Repeat with the remaining batter and make as many dosaes as needed.
Tips: Use brie cheese that is at room temp or soft spreadable cheese or any kind of hummus. Can also use grated pepper jack, colby or any cheese of your choice. You can use flour tortillas or crepes in this recipe.
